Keto Granola Bars

 These creamy nutty granola bars are fantastic for breakfast on the go.  A small tip, you’ll need to eat them soon after taking them out of the fridge, as they melt very fast.

 

Ingredients

  • 1/2 cup of smooth nut butter – either peanut or almond, or a mixture of both
  • 1/3 cup of coconut oil
  • 2 tsp vanilla extract
  • 1/4 cup of Nativa (erythritol/stevia sweetener)
  • 1/2 cup sliced almonds – plus extra for the top
  • 1/3 cup flax meal
  • 1/3 cup pumpkin seeds
  • 1/4 shredded coconut
  • 1/2 tsp cinnamon
  • 1/4 cup cocoa nibs

 

Method

  1. Mix all wet ingredients together and cook on high in the microwave for 30 seconds
  2. Add sweetener and cook again for 30 seconds.  Mix well
  3. Add remaining ingredients saving the almonds for the top and mix well again
  4. Pour ingredients into a silicon loaf pan and freeze until hard and set.
  5. Cut into bars.

Store in the fridge until you want to eat them.  Eat immediately.

Makes 8.  10 gms carbs, 31 gms fat, 14 gms protein, 1 gm sugar
