These creamy nutty granola bars are fantastic for breakfast on the go. A small tip, you’ll need to eat them soon after taking them out of the fridge, as they melt very fast.
Ingredients
- 1/2 cup of smooth nut butter – either peanut or almond, or a mixture of both
- 1/3 cup of coconut oil
- 2 tsp vanilla extract
- 1/4 cup of Nativa (erythritol/stevia sweetener)
- 1/2 cup sliced almonds – plus extra for the top
- 1/3 cup flax meal
- 1/3 cup pumpkin seeds
- 1/4 shredded coconut
- 1/2 tsp cinnamon
- 1/4 cup cocoa nibs
Method
- Mix all wet ingredients together and cook on high in the microwave for 30 seconds
- Add sweetener and cook again for 30 seconds. Mix well
- Add remaining ingredients saving the almonds for the top and mix well again
- Pour ingredients into a silicon loaf pan and freeze until hard and set.
- Cut into bars.
Store in the fridge until you want to eat them. Eat immediately.
Makes 8. 10 gms carbs, 31 gms fat, 14 gms protein, 1 gm sugar
