Breakfast Bars – Take One

Inspired by a recipe I saw in Nigella Express

Makes 16 chunky bars


  • 250 g rolled oats
  • 1 395 g tin of condensed milk
  • 45 g shredded coconut
  • 150 g dried fruit (cranberries, cherries, raisins etc …)
  • 100 g mixed seeds (pumpkin, sesame, sunflower ..)
  • 100 g mixed nuts (almonds, cashews, peanuts, walnuts ..)


  1. preheat oven to 130ºC
  2. grease a slice tin
  3. warm the condensed milk, don’t let it caramelise
  4. mix dry ingredients in a large down
  5. mix in warmed condensed milk
  6. press mixture into the slice tin with a spoon or spatula, or better still your hands.  To stop it sticking to your hands you can lay some baking paper across the top and then press it down
  7. bake in the oven for an hour or slightly golden brown.  Don’t let it colour too much as it will go too crunchy
