Geek Pie

Loosely based on a Greek Pie


  • 5 eggs
  • 1/4 C milk
  • 100 g frozen spinach (defrosted and squeezed of water)
  • 3 t (heaped) minced garlic (3 cloves of garlic)
  • Short Pastry
  • 100 g feta, roughly crumbled
  • 1/2 C grated tasty cheese
  • Fresh oregano (or dried if you prefer)
  • salt and pepper to taste


Preheat oven to 180ºC, grease a pie or flan tin

Beat eggs slightly and mix in milk, set aside

Roll out pastry and line tin, place in the fridge to chill for five minutes

Spread garlic across the bottom of the pie

Sprinkle with spinach

Sprinkle with roughly crumbled feta

Pour over egg mixture

Sprinkle with cheese and oregano.  If I’m using fresh Oregano I use a few sprigs, if dried then around 1/2 tsp – but this can be changed to your preference.  

Season with salt and pepper

Bake in the oven for 30 minutes



Serve with pickle and a fresh garden salad
