Lemon Meringue Pie Martini

I have been known to enjoy the odd dessert and cocktail, so I thought, hey, why not combine them both?!  This is not for the faint hearted, if you think its a tad on the strong side, add some lemonade (the non-fizzy kind) or more lemon juice.


  • 4 parts vanilla vodka
  • 3 parts triple sec
  • 2 parts simple syrup
  • 3 parts lemon juice ice cubs
  • 1 t lemon curd per cocktail
  • 1 soft meringue for each cocktail (either poached or italian meringue)


  1. Add the first four ingredients to a shaker and shake, let sit for approx. five minutes – the lemon juice ice cubes will start to melt into the mix
  2. divide between the cocktail glasses
  3. spoon lemon curd into each glass, it will sink to the bottom
  4. place a meringue on top

Serve with a spoon
