Economical Fruit Loaf

Makes two loaves


  • 125 g butter
  • 2 C water
  • 1 tsp salt
  • 2 tsp ginger
  • 400 g mixed fruit
  • 2 C sugar
  • 4 C flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp mixed spice
  • (optionally substitute 3/4 C water for  whole 425g can crushed pineapple)


Simmer water, sugar, butter, spice fruit and salt for five minutes.  Let it cool.  Add flour and soda and mix.  Put mixture into 2 large loaf tins and bake for 180ºC for 1 1/2 hours.

** Note:  If you are using the pineapple be aware that the sugars in the fruit tend to make the tops of the loaves caramelise fast, so make sure you place the them in the middle of the oven to bake and keep and eye on them.
