Summer Beetroot Salad

Ingredients

  • 4 beetroot, peeled and grated (or sliced with a mandolin)
  • 3 carrots, peeled and grated (or sliced with a mandolin)
  • 2 pears, peeled and grated (or sliced with a mandolin)
  • 1/3 c roughly chopped coriander
  • 100 g feta roughly crumbled
  • white balsamic vinegar

Method

  1. Mix the beetroot, carrot and pear in a bowl, combine well.
  2. Dress with a splash of balsamic vinegar
  3. Season with salt and pepper
  4. mix though the coriander
  5. place in serving dish or bowl and sprinkle the feta over the top

 

For a variation you could add raisins or peanuts, you could also dress it with a standard oil based dressing, have a play.
