- Bring to the boil four cups of water
- Cut off about a thumb of ginger root, peel and slice thinly.
- Add to the pot and simmer for about fifteen minutes.
- At about five minutes left, add a couple of slices of lemon
- Add honey to taste, I added about 1 dessertspoonful, but you my want more.
- Strain and pour into cups hot. I just tipped the entire pot into a teapot and poured it from there.
