Simple Syrup

used in cocktails to sweeten.  Using the syrup and not sugar means you won’t get any undissolved crystals in the cocktail


  • 2 parts sugar
  • 1 part water


  1. Add sugar and water into a saucepan, don’t stir
  2. place over a medium heat and swirl around until the sugar has dissolved.  make sure that it doesn’t start caramelising
  3. let it just boil and then remove from the heat and cool
